1. You need variety.
-Grab your favourite kind of salad (please, anything but iceberg!) -mine is a mix of rocket and baby spinach -peppery and fresh,
-Use different kinds of vegetables. I added cucumber, avocado (very good for you, full of nutritious 'good' fats), and carrot -you can use whatever you think goes well together. Chop it small so you get a bit of everything with each bite.
2. Add some flavour.
Rather than using pre-made (and frankly gross) dressing, use real flavour from things like herbs and interesting fruit/veg. I used celery -I like its crisp, fresh flavour- and apple. It may sound weird but I love adding green apple to salad because it makes it sweet and tangy. You can also try herbs like coriander, basil and parsley, whatever you think goes with the salad. Or experiment with pear, mango, or any type of forest fruit. Or even dried fruits like cranberries.

This is entirely optional, but cheese can really take a salad to the next level. You can use anything from parmesan slivers, to pieces of brie, mozarella, feta crumbles, grilled haloumi, goat's cheese... The sky is the limit.

You've created a beautiful combination of flavours -the last thing you want to do is somether it in something fat that will kill all the complexity of the different ingredients mixed together. Just use some salt and pepper, a lug of olive oil, and a splash of balsamic or a squeeze of lemon juice if you're into that. If you're feeling extra fancy, you can make a simple vinaigrette by mixing the oil and vinegar with some mustard and honey.
